Roasted Patagonian Purple Garlic
This is one of my favourite non-meat things to cook on the BBQ - a simple roast garlic concoction which you can either serve with a main meal or have ready in the fridge all week for a quick snack.  Given how gorgeous these garlic bulbs were, I couldn't resist giving them a little photography love!  The recipe is as simple as:  cut the bulb in half, pour over some olive oil & then liberally apply sea salt, freshly cracked black pepper & either herbs de province or, as in this case, just dried oregano. Roast for 30-50 minutes (depending on the heat of your BBQ) until the cloves go nice & mushy.  Spread on some warmed bread.  If you don't have a garlic roaster, a tin foil pouch works perfectly.
