Kamado Joe Pork Shoulder
2.8Kgs of porky loveliness!  Continuing my use of Big K's Cocoshell briquettes I decided I would try them on a longer cook and given the relatively neutral smoke profile, I added some big chunks of oak to give the pork a real smokey hit.  The pork was prepped by removing the skin & then rubbing with French's mild mustard before being covered with Country Wood Smoke's House Rub.  I then placed the skin back onto the pork to help keep the pork as moist as possible.  The end result is a huge tray of amazing tasting pork which will get used a little & the rest vac-packed & frozen for easy meals or for use on pizzas.  This cook was not without problems however.  Total cook time was around 12.5 hours - mainly due to the temperature falling whilst I was away from the house due to lack of fuel.  I used just over half a bag of the Cocoshell briquettes & they performed well until the temperature started to fall at about 3 hours.  Next time I will try with a whole bag of them - think that will be fine but they do seem to burn quicker weight for weight compared to my normal fuel (Big K's ACH15 or BCH15).  I feel a test coming on.....  The other test that this cook was designed for was the Meater+.  I had read some people's concerns about the block or Meater not lasting on long cooks.  Well, I decided to not play safe & whilst the Meater probe was charged fully before the cook, I didn't replace the block batteries.  I shouldn't have worried - it performed flawlessly with no power problems at all & I love the fact I can monitor the cook when I am away.
