Seared duck breast
This was my second attempt at a search duck breast with the lovely Only Bones - Happy Zest. Whilst this rub does not have any added sugar, it does have a fair bit of natural sugar from its ingrediants. Not really appreciating this, my first attempt ended up with an overly chared skin - tasted ok, but looked burnt. This time I endeavoured to render the fat under the skin a little without the rub, and only after it had rendered did I flip the breast & add the rub. Worked a treat as you can see. I also dug out my trusty Craycourt cast iron set for the convenience of having both a flat searing surface as well as a grill. Still haven't changed the Meater+ batteries & it worked a charm as per usual....!
